Some things are just better in a mug, am I right? How good does a nice, warm cup of creamy oatmeal sound… Now picture it in a mug, cozied up on a chair with your favorite spoon. (Am I the only weird one who has a favorite spoon?) 😜
I’ve been craving the traditional cinnamon apple recipe but always throw my own extras in there to jazz it up. What I end up making everyday is essentially an oatmeal-banana-cinnamon-apple recipe, and it’s extra creamy because I mash up half the amount of bananas and stir it in the oatmeal as its cooking.
There’s tons of recipes out there that teach you how to make 1 minute oatmeal in a mug using the microwave, but let me just tell you… I tried that and it was an epic disaster. I stopped the microwave every 30 seconds to stir it like they said to do in order to prevent over flowing, yet I still heard a big “BOOM!” and opened the microwave to find an entire cup of oatmeal splattered everywhereeee. It looked like the most gruesome oatmeal death I’ve ever seen and the clean up took wayyyy longer than all the time it was supposed save me. On top of that, when I took the glass dish out of the microwave to scrub it in the sink, it slipped out of my hands and shattered everywhere… what a nightmare. Oh, and apparently those round microwave dishes that spin around while cooking are NOT tempered glass, just a little FYI. So, never again will I try it that way. Never in a million years. I cook mine on the stove, but hey, if you’ve mastered the microwave method have at it!
Oatmeal is oatmeal, so the ingredients and toppings I use can always be substituted for whatever your faves are, but here is the step by step way in which I make mine…
1 cup of milk
1/2 cup of oats
Dash of salt
1-2 Tbsp brown sugar
1/4 of an apple, diced up
1/2 banana, diced up
Dash of pumpkin spice seasoning (optional)
2 tsp cinnamon
2 Tbsp chopped pecans
1 Tbsp chia seeds
I add the oats in the milk just as I turn the stove on to give it more time to soften up. Then I add the seasonings once it’s warmed just before boiling. After that, I take most of the banana (saving some for topping) and mix it in real well so it’s nice and creamy. Then, add the apples and let it finish cooking. Once it’s all cooked and blended well, I pour it in a mug and top it with the remaining bananas and nuts. That’s it!
I’ve probably had this nearly every day for breakfast (sometimes all I want is a donut). It’s also one of my favorite mid day snacks, I treat myself to it during the kids’ nap time and don’t beat myself up about the extra pots in the sink (we’ll let daddy worry about that 😜). It’s funny how pregnancy changes your preferences because before now I was never really a big oatmeal person. What are some of your favorite pregnancy cravings? I’d love to know!
